Two things I love when I go to an Indian restaurant or order a takeaway – Saag Aloo and samosas. Yes, they are normally served separately, but… I just had an inkling that it would taste even better putting the two together and making Saag Aloo filled samosas! These giant samosas are healthy but filling and satisfying – serve them with a curry to dip them in and you will not regret it!

This dessert is absolutely amazing for when you fancy something sweet but want a pudding that’s lighter and lower fat and calories! Filo pastry is a great substitute for puff and shortcrust pastry, which are both higher in fat. You can use whatever berries you’d like as long as they’re frozen to begin with – this will create a lovely sauce when defrosted with a bit of boiling water and agave nectar to sweeten! I’m definitely drawn to hot desserts with cold toppings, so try this with a small scoop of dairy-free ice cream and it will not disappoint!

Sesame Seed Salmon With Teriyaki Rice Noodles

I’ve been loving noodles lately – they’re so easy to cook and there are so many combinations of flavours to chop and change between! This dish is balanced and nutritious and is also super tasty. I decided to make a sweet teriyaki sauce for the noodles and cook the salmon with sesame seeds to add some different textures and flavours! I love to cook my salmon in the oven as it always comes out perfect and never dry – it also requires no oil like frying would need! Put in whatever veggies you like but I stuck with my favourites; broccoli and asparagus!

Chicken Milanese With Spaghetti

I absolutely love breaded chicken – Whether its escalopes, nuggets or dippers… I will eat them! Here’s a gluten-free recipe I love using when I fancy chicken milanese and spaghetti. I’ve subbed out actual breadcrumbs for ground almonds as they are gluten-free, plus they have low carbs to make more room for pasta! This dish is healthy, super easy to make and filling so give it a go if you also love breaded chicken.
