These healthier muffins are so easy to make and can help with those sweet cravings we all get! I used overripe bananas and honey to sweeten rather than sugar, and swapped out butter for coconut oil for some nutrition-conscious changes! I also used gluten free flour however you can also use plain if you don’t need these to be gluten-free.

Lemon Coconut Flour Cookies

These lemon and coconut cookies are so refreshing and great as a light snack. I love using lemon zest in these as an additional flavour but be creative and switch it out with lime or orange if you like! By using coconut flour and honey, these cookies are still sweet even without refined sugars, and they’re completely gluten-free!

Fluffy Chocolate Chip Pancakes

These chocolate chip pancakes are perfect as a healthier choice for breakfast. I love them because they’re gluten-free, refined sugar-free and have lower calories than regular pancakes but are still so tasty and fluffy! I like to top mine with different berries and dairy-free protein yoghurt to add a bit more protein, but any of your pancake toppings will taste great with these. Stack them high and eat whilst hot!
