This dessert is absolutely amazing for when you fancy something sweet but want a pudding that’s lighter and lower fat and calories! Filo pastry is a great substitute for puff and shortcrust pastry, which are both higher in fat. You can use whatever berries you’d like as long as they’re frozen to begin with – this will create a lovely sauce when defrosted with a bit of boiling water and agave nectar to sweeten! I’m definitely drawn to hot desserts with cold toppings, so try this with a small scoop of dairy-free ice cream and it will not disappoint!

Easy No-Bake Peanut Butter Flapjacks

These no-bake flapjacks are so easy to make and are great as a quick on-the-go breakfast or snack. All the better they only have 5 ingredients, 4 of which are very nutritious (unfortunately, agave nectar hasn’t been proven to have any health benefits, however it is a vegan, refined sugar-free sweetener)! Peanut butter and coconut oil include healthy fats, oats provide us with plenty of vitamins, minerals and fibre, and dark chocolate is rich in antioxidants which is proven to lower the risk of certain heart diseases! All in all, these are a tasty snack which can be enjoyed as part of a healthy diet.

Nothing beats a blueberry muffin, whether its for breakfast, a snack, or dessert – they’re so tasty! As well as these blueberry muffins being deliciously sweet and spongey, they’re also vegan, gluten-free and refined sugar-free! So they are healthier (nutrition and ingredient-wise!) than regular muffins – which would use refined sugars. Give these a go if you like blueberry muffins…or if not, try the base mixture with other fresh fruit, chocolate chips, nuts or dried fruits!

Chunky Vegan Chocolate Chip Cookies

These cookies have it all – they’re vegan, gluten-free and refined sugar-free. All that and they are chunky and chewy on the inside but crunchy on the outside! What else do you want in a cookie?? I’m definitely team chocolate chip when it comes to cookies so I used dark chocolate chips in the mixture and also added raspberries to the top – just because I love raspberries! But you can add any other ingredients to the mixture – raisins, nuts, other dried or fresh fruits, etc. So get baking, the cookies are calling!

Vegan ‘Chocoholic’ Peanut Butter Rocky Road

I want to personally thank whoever came up with rocky road – it’s chocolatey, has chewy marshmallows and you don’t need to fuss with baking… Just mix it altogether and shove it in the fridge! I made this easy and super quick vegan and gluten-free peanut butter rocky road and it was so tasty – if you like chocolate and peanut butter, give this recipe a go…you won’t be disappointed!
