Nothing beats a blueberry muffin, whether its for breakfast, a snack, or dessert – they’re so tasty! As well as these blueberry muffins being deliciously sweet and spongey, they’re also vegan, gluten-free and refined sugar-free! So they are healthier (nutrition and ingredient-wise!) than regular muffins – which would use refined sugars. Give these a go if you like blueberry muffins…or if not, try the base mixture with other fresh fruit, chocolate chips, nuts or dried fruits!

If you haven’t realised already, I don’t post many breakfast recipes…and it’s not because I don’t like breakfast, I love breakfast – but to be truly honest, I just really love toast or cereal (yes, I’m one of those people)! However, I stepped out my comfort zone and made something different to toast or cereal…and it was delicious! This was a really tasty and healthy dish and it’s so simple to make – all cooked in one oven dish too! So, for someone who doesn’t explore many breakfast options, I really enjoyed this – definitely give this one a go!

These healthier muffins are so easy to make and can help with those sweet cravings we all get! I used overripe bananas and honey to sweeten rather than sugar, and swapped out butter for coconut oil for some nutrition-conscious changes! I also used gluten free flour however you can also use plain if you don’t need these to be gluten-free.

These chocolate chip pancakes are perfect as a healthier choice for breakfast. I love them because they’re gluten-free, refined sugar-free and have lower calories than regular pancakes but are still so tasty and fluffy! I like to top mine with different berries and dairy-free protein yoghurt to add a bit more protein, but any of your pancake toppings will taste great with these. Stack them high and eat whilst hot!
