Easy Prawn Tacos


(Recipe serves 2)

For the refried beans:

  • Frylight spray
  • 1 onion, diced
  • 1 clove garlic, crushed
  • 1/2 tsp cumin 
  • 1 tin mixed beans, rinsed and drained
  • Water
  • 1 lime, juiced

For the prawns:

  • 300g raw king prawns
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp chilli powder
  • 1 lime, juiced

For the tacos:


  1. Make the tomato, lime & coriander salsa ahead then set aside for serving.
  2. Now, start by heating a frying pan over a medium heat. Cook the onions in spray oil for 5 minutes until softened then add the garlic.
  3. Fry for a further minute before stirring in the cumin and mixed beans. Pour a few tablespoons of water into the pan then cook the beans for at least 5 minutes, until cooked through – keep adding a bit of water if needed.
  4. To mash the beans, I used the back of a fork and mashed until it was the consistency I liked. I also added a bit more water here when the beans were too difficult to mash. Mix in your lime juice then season with salt and pepper and set aside. 
  5. In another frying pan, heat some more spray oil and add your prawns. Fry these on a medium heat until the outsides of the prawns are pink.
  6. Now add the spices and cook for a further few minutes till the prawns are cooked through. Finish with the lime juice and some salt and pepper to taste!
  7. Cut the wraps to a reasonable size for your tacos – I used a cereal bowl to cut around which was the perfect size! Now assemble your tacos with the wrap, refried beans, prawns, avocado and salsa. Serve with an extra wedge of lime and enjoy!
