(Recipe serves 4 as a dip)
- 7g coriander, chopped
- 1 red chilli, finely sliced
- 1/4 red onion, finely diced
- 3 on the vine tomatoes (about 240g), diced
- 1 tsp olive oil
- Juice of 1-2 limes (depending on taste)
- Salt and pepper to taste
- Mix all the ingredients together in a bowl then season to taste with salt and pepper.
- Serve as a dip or with salads, tacos, etc!
