(Recipe makes 3-4 servings)
- 1/2 garlic clove, crushed
- 10g fresh coriander
- 65g avocado
- 1 tbsp tahini (12g)
- 1 tbsp olive oil (10g)
- Juice of 1 lemon
- Salt and pepper to taste
- Put all the ingredients except the water into a food processor or blender.
- Blitz to combine then slowly add water and blend. Add as little or as much water as you’d like – I wanted mine to be more of a dressing rather than a dip so kept adding water till it was how I wanted it.
- Taste to double check for more seasoning/more lemon juice then serve over salads, burrito bowls, Buddha bowls, tacos, wraps…the list goes on!
