Avocado, Coriander & Tahini Dressing


(Recipe makes 3-4 servings)

  • 1/2 garlic clove, crushed
  • 10g fresh coriander
  • 65g avocado
  • 1 tbsp tahini (12g)
  • 1 tbsp olive oil (10g)
  • Juice of 1 lemon
  • Water
  • Salt and pepper to taste


  1. Put all the ingredients except the water into a food processor or blender.
  2. Blitz to combine then slowly add water and blend. Add as little or as much water as you’d like – I wanted mine to be more of a dressing rather than a dip so kept adding water till it was how I wanted it.
  3. Taste to double check for more seasoning/more lemon juice then serve over salads, burrito bowls, Buddha bowls, tacos, wraps…the list goes on!
