Fresh Peach & Quinoa Salad


(Recipe serves 2)

For the salad:

  • 120g quinoa, rinsed 
  • 360ml boiling water
  • 2 peaches
  • 1/4 cucumber
  • 30g cashews, roasted

For the dressing:

  • 1 lemon, juiced
  • 1 1/2 tbsp olive oil
  • 3 small sprigs coriander
  • 1 1/2 tsp agave nectar 
  • 1/2 tsp balsamic vinegar


  1. Mix together the dressing ingredients until well combined and taste for seasoning.
  2. Then cook the quinoa according to packet instructions – mine needed 360ml boiling water and simmered for 18 minutes.
  3. Meanwhile, de-stone and cut your peaches into cubes and dice the cucumber. Also, crush your cashews slightly ready for serving.
  4. Mix together the cooked quinoa, peach, cucumber and a few tablespoons of the dressing. Serve with cashews to sprinkle on top and extra dressing if wanted!
