Halloumi “Gyros” With Crispy Chips

(Recipe serves 4)

  • 500g maris piper potatoes, sliced into 1/2 inch thick chips
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp celery salt
  • Black pepper
  • 2 packs of halloumi (450g), sliced – I cut each block into 6 slices
  • 4 wholemeal wraps
  • My easy tzatziki
  • My healthy chilli sauce

  1. Preheat the oven to 220C/450F/Gas mark 8.
  2. Make the tzatziki and chilli sauce and set aside (if you like tzatziki and chilli sauce then you definitely need to try these healthy versions)
  3. Par-boil the potatoes until nearly cooked but not quite done yet – drain these in a colander then let sit for 5 minutes to steam dry.
  4. Mix the potatoes with the smoked paprika, garlic powder, celery salt and a good pinch of black pepper in a large bowl. Place in a single layer on a non-stick baking tray (if you think they may stick to your tray the spray with oil beforehand).
  5. Put the potatoes in the oven for 20-25 minutes or until golden and crispy. Set aside for the gyros.
  6. Cook the halloumi by frying or grilling for 3-4 minutes on each side (or until cooked through and golden on the outside).
  7. Now assemble the gyros with your wholemeal wraps, tzatziki, crispy chips, halloumi and tasty chilli sauce – Enjoy!
