Make the tzatziki and chilli sauce and set aside (if you like tzatziki and chilli sauce then you definitely need to try these healthy versions)
Par-boil the potatoes until nearly cooked but not quite done yet – drain these in a colander then let sit for 5 minutes to steam dry.
Mix the potatoes with the smoked paprika, garlic powder, celery salt and a good pinch of black pepper in a large bowl. Place in a single layer on a non-stick baking tray (if you think they may stick to your tray the spray with oil beforehand).
Put the potatoes in the oven for 20-25 minutes or until golden and crispy. Set aside for the gyros.
Cook the halloumi by frying or grilling for 3-4 minutes on each side (or until cooked through and golden on the outside).
Now assemble the gyros with your wholemeal wraps, tzatziki, crispy chips, halloumi and tasty chilli sauce – Enjoy!
