Time for probably one of my most made dishes – I’ve eaten risotto more times than I can count and this is my go-to recipe for a fool-proof, delicious, ‘not so bad for you’ risotto! It’s creamy, buttery and mushroomy (if that’s actually a word) – and the saltiness from the parmesan is so tasty, you won’t stop wanting to eat this! Also, don’t worry if you’ve never made risotto, for some reason people say it’s difficult to get right but I’ve made this recipe easy to follow and you will love it! Simply take out the chicken from the recipe and use vegetable stock if you’re vegetarian!
