So today I decided to just go with the flow and not plan lunch (which was strange as I normally plan everything)! Instead, I ended up looking in the cupboards and fridge and seeing what I had to work with. I know that my normal kitchen ingredients may not be the same as what you have to hand, but this is a super salad to chop and change ingredients – for example, different types of protein, beans or veggies – and it will still turn out delicious! This warm salad is also full of goodness and is definitely going to be a regular lunch for me!
