Healthy Kung Pao Chicken & Egg Fried Rice

Try out this super easy and tasty ‘fakeaway’ Kung Pao chicken and egg fried rice! Now, I know Kung Pao is traditionally coated in cornflour and fried…the sauce includes lots of sugar… and egg fried rice is always better from the Chinese takeaway – no doubt about it! But, this is so much healthier and includes minimal oil, no refined sugars and plenty of protein…it’s also delicious even though it’s not the real thing!
