Turkey Mince and Avocado Lettuce Tacos

Ingredients:

(Recipe serves 2)

  • 1tbsp coconut oil
  • 5 spring onions, sliced
  • 4 garlic, chopped
  • 1 inch ginger, chopped
  • 2 chillies, sliced
  • 500g turkey mince – 2% fat
  • 1/2 tsp chilli powder
  • 1 tsp smoked paprika 
  • 1/2 teaspoon cumin
  • Salt and pepper
  • 150g mushrooms, sliced
  • 1 tbsp fish sauce
  • 1 1/2 tbsp light soy sauce
  • Little gem lettuces
  • 1 avocado 
  • My easy pickled red cabbage
  • Jamie Oliver’s kiwi salsa (from this recipe)

Recipe:

  1. Fry the spring onions, garlic, ginger and chillies on medium for a few minutes till the spring onions start to soften.
  2. Add the turkey mince and start to break apart. Cook this for 2 minutes, stirring regularly, then add the spices and season with salt and pepper.
  3. Add the mushrooms and continue to fry and stir until the mushrooms are cooked (about 5-7 mins).
  4. Finish by stirring in the fish sauce and soy sauce then assemble your tacos! Top them with the avocado, my super easy pickled red cabbage which adds a delicious crunch, and Jamie Oliver’s delicious kiwi salsa 🌟
