One of my favourite healthy vegan/vegetarian snacks are falafel – I love making a big batch to keep in the fridge for the week for a quick low calorie snack. So I thought why not make a Greek inspired meal out of it! Paired with the vegan tzatziki and wholemeal flatbread, this dish is full of amazing flavours and textures!
